In the old days when the honey was considered as a rarity, caramelizing malt into the honeylike condiment is a substitute for honey. The Jochung is made by caramelizing the rice and barley half way through the malty state.

There are Schizandrachinensis, Whanghi apple and plum (yam) Jochung made from the local ingredients (rice, grain malt, and oriental herb) and fructo-oligosaccharide to help bifidobacteria vitalization and reduce calories serving as a healthy alternative jam or syrup.
