[Helianthus tuberosus / Jerusalem artichoke]

- It is native to North America and it comes from the plant called Compositae (1 year old). It blooms from August to September like sunflowers. At the end of October, when the flower falls, root tubers, which look like a potato, appear underground. This root is called Jerusalem artichoke.

- Herbal name is Helianthus tuberosus; and nickname is ddungddanji. Jerusalem artichoke is the plant of Compositae. English name is Jerusalem artichoke and scientific name is Helianthus tuberouse.

- Carbohydrate of Helianthus tuberouse contains approximately 15% or more of “inulin”, which is considered as a mysterious substance in the root. Thus, it is known as natural insulin.

- Inulin has the structure of polymerization of 30-40 fructose not glucose; and it is not broken down in vivo by digestive enzymes. Even if it is broken down, many forms of fructose are generated. Therefore, it does not elevate the glucose level in the blood.

- It contains fructose, glucose and large amounts of various enzymes besides the inulin. In particular, action of inulinase is strong to decompose inulin into fructose. Therefore, it could be used as raw materials during manufacture, which is the raw food material. This fructose has been developed as injection for treatment of diabetes, drug addiction, and alcohol addiction.
